Louis Bouillot Perle de Vigne Reserve Brut
Burgundy
Available in cartons of six
From those wonderful folks who brought us Grandin and Charles Boisset, the vineyards of Louis Bouillot lie within one of France's most superior appellations along the Nuits Saint Georges. A slightly effervescent wine, defined as Cremant, dominated by Pinot Noir, the balance of Chardonnay, Gamay and Aligote, sourced from grand old vineyards in La Bourgogne. Perle de Vigne Grand Reserve Brut is a superb representation of all that's noble and sophisticated about the House of Louis Bouillot, established 1877.

After a century and a half of savoir-faire, the estate vineyards of Louis Bouillot continue to yield harvests which are highly specialized for Cremant de Bourgogne, establishing international renown for excellence in this refined style of sparkling. Pinot Noir, Chardonnay, Gamay and Aligote grapes are vinified to true Methode Traditionelle. Parcels are treated to a pneumatic press, vinification, bottling and a course of riddling, followed by disgorgement and liqueur doseage. Perle de Vigne Grand Reserve Brut is naturally fermented and matured twenty four months in its own bottle, achieving maximum aromatic qualities and finesse imparted by time spent on sedimentery yeast lees.

A fine, petulant wine, amber, golden rose hue. Bakery notes and aromatic yeast bouquet, buttered toast, strudel and freshly cut pear. Vanilla and almond flavours define a creamy palate that's perfectly balanced between lemon acidity and richness of fruit, a long enduring aftertaste, lingering on notes of honey and gingerbread, in full articulation of Nuits Saint Georges.

Jean Bouillot was a wine and spirits merchant, one of the few of his day to specialize in Cremant de Bourgogne, Burgundy's methode traditionnelle sparkling wine. Blanc de Blancs is a petulant wine from white grapes, almost exclusively Chardonnay with a minor component of Aligote from Maconnais, Yonne and Châtillonais, vinified to true Methode Traditionelle. Parcels are treated to a pneumatic press, which crushes the fruit before undergoing fermentation in tanks followed by bottling. Louis Bouillot Blanc De Blancs is naturally fermented and matured twenty four months in its own bottle, achieving maximum aromatic qualities and finesse imparted by time spent on sedimentery yeast lees. Alcohol 12.0%

Bright straw yellow colour with tinges of green. Its herbaceous nose and soft citrus notes mingle with the fragrance of fresh, dewey grass and scents of freshly opened nuts. Exhibiting the structure of Mâconnais alongside the vivacity and freshness of Yonne, the mouth is crisp with mouthfilling acidity, beautifully expressed like the character of a pink grapefruit.

Louis Roederer is driven by a commitment to quality that takes precedence over quantity. Premiere Brut is dominated by the slightly larger component of Pinot Noir, finessed by the inclusion of the most superlative Chardonnay, enhanced by a tenth proportion of Pinot Meunier. Louis Roederer collates Pinot Noir from the Montagne de Reims and Valley de la Marne, with Chardonnay from the Cotes des Blanc. An assemblage of wines from a minimum of four different vintages, matured in bottle for a minimum of three years, Brut Premier includes up to 10% of Reserve wines - Cuvees from previous vintages stored for two to five years in large oak casks. Dosage 11-12 gms per litre.

The inclusion of reserve wines gives wonderful complexity and roundness to the fresh creamy palate. A perfect balance between the structure and fruitiness of the Pinot Noir and the finesse of the Chardonnay. Louis Roederer Brut Premier is a classic aperitif or celebratory Champagne. The volume of Louis Roederer produced each year depends on a rigid set of qualitative criteria, and nature's willingness to comply. Every year at least two-thirds of the grapes must come from the estate's own vineyards, a strictly enforced policy. The number of bottles is therefore inevitably limited. Control of the quality of the grapes remains the key factor. Yields from each individual parcel, village or cru are always vinified separately, partly in small tanks partly in wooden vats. Minimal use of malolactic fermentation conserves the fruitiness and freshness of the wines. Meticulous care is taken to conserve the character of the individual wines whose distinctive characters will enrich the composition of the finished Cuvee.

A super rich blend of the highest quality Champagne grapes 55% Pinot Noir and 45% Chardonnay. Aged for five years in its own bottle on the initial sediment lees before disgorgement. It then enjoys a doseage of 11-12g/L liqueur, whereupon it is resealed under it's final cork and aged for a further six months.

A lustrous amber yellow colour with an effervescence that is vibrant and smooth, and borders on cream. An exuberant bouquet revealing aromas of ripe fruits lightly steeped in alcohol (blackcurrant, cherries in eau-de-vie), together with toasty and wooded notes. A disarmingly refined wine with a bead like a parfait, a well bodied palate and a long powerful finish.
